We are right smack dab in the middle of August, and a hot August it is. Why, it’s so hot that a bee took off its yellow jacket. It’s so hot that the corn on the stalks started popping, and the animals thought it was snow and almost froze to death. Now that is hot.
By the way, Scott, what does a pig say on a very hot day?
“I’m bacon!”
Enough hot jokes, let’s cook, but we’ll put it in the crockpot.
My granddaughter Taylor made this recipe, and I got to sample it. It was just right with the seasonings it had. But if you want to add your own, you can.
Ingredients
3 chicken breasts
1 can diced tomatoes with green chiles (10 oz.), not drained
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 onion, diced
2 tsp. minced garlic
2 tsp. Italian seasoning
4 oz. cream cheese, diced
2 cups shredded cheddar cheese
1 pkg. spaghetti (16 oz.)
Directions
Add 3 chicken breasts, 1 can diced tomatoes with green chiles (10 oz.), not drained, 1 can cream of chicken soup, 1 can cream of mushroom soup, 1/2 onion, diced, 2 teaspoons minced garlic and 2 teaspoons Italian seasoning to the crockpot.
Cover and cook on low 6 to 8 hours.
Shred chicken and stir. Add spaghetti noodles and cook an additional 30 minutes.
Stir in 4 ounces cream cheese, diced, and 2 cups shredded cheddar cheese until well combined. Cover and cook on low for 20 to 30 minutes until the cheese is fully melted and incorporated into the sauce.
I enjoyed mine with a salad.
I have to go. I belong to a club called “Doctors Club.” I must go see one today. We have our meetings on a weekly schedule. Almost all my organs have their own doctor. Then they report to my health care provider.
But don’t worry, I’m not going to do an “organ recital” today.
