Drucilla’s Little Helpers

by Drucilla Ray

Here we are finishing out the month of June, and this will be the last of the dairy winners from our contest at our FCE meeting.

The winner I am spotlighting today is Pat Taylor, winner of the overall tastiest entry. Here is the recipe for her Five Flavor Pound Cake. This would be a crowd pleaser because it serves about 15. You could serve it with sauces such as strawberries or blueberries. It was delicious.

Miss Daisy’s Five Flavor Pound Cake

Ingredients:
1 cup butter
1/2 cup vegetable shortening
3 cups sugar
6 eggs, well beaten
3 cups all-purpose flour, sifted
1/2 teaspoon baking powder
1 cup whole milk
1 teaspoon each coconut, butter, lemon, rum and vanilla extracts

Directions:
In a large mixing bowl, combine butter, shortening and sugar until light and fluffy. Add eggs.

Combine flour and baking powder. Add to the creamed mixture alternately with milk. Stir in extracts.

Spoon batter into a 12-inch tube pan. Bake in a preheated 325-degree oven for 1 1/2 hours, or until cake tests done.

Add glaze and cool in pan for about 10 minutes before turning out.

Makes 14 to 16 servings.

Glaze

Ingredients:
1 cup sugar
1/2 cup water
1 teaspoon each coconut, butter, lemon, rum and vanilla extracts

Directions:
In a saucepan, combine all ingredients and gently bring to a boil. Pour over cake in pan. Let cake sit in pan until cool.

I would like to thank Beth from the Cookeville History Museum for the invitation to speak at their reception to wind up “Recipes Remembered.”

The designer at the museum did an outstanding job putting together all the different displays. I loved seeing the old aprons, the antique kitchen gadgets and especially the old cookbooks.

We love our recipes and cookbooks. They are like a record of the past and describe the foods available, family traditions and cooking methods. I love my older cookbooks. They can take you back to a time of remembering family, friends and traditions.

We had a nice group of people. It was so nice to meet some of my readers, and the treats were delicious. A good time was had by all.

Mark your calendar for another event that I will be helping with on Oct. 3 at Granville.

I’m going to eat cornbread — or is that make cornbread, or do a class on cornbread? Stay tuned for more about cornbread.

My favorite is the cornbread smoothie. Want the recipe? Sure. Take a glass, pour in some buttermilk, crumble up some cornbread and add it to the buttermilk. Grab a spoon and dig in. Enjoy!

Before I go, I just want to say: enjoy your life more. Relax and remember to let your face know.

When we, as God’s people, walk around with a sour face and don’t smile, what is that saying about the One who created us? But when you walk through the day with childlike delight, enjoying every blessing, you are showing your Father’s image.

The world is watching. He loves that.
