Welcome to week 2 of writing with Clarissa and Herbert Williams and their staff at The Highlands Insider.
Today's treat will be one of my favorites from school days in the 1960's. Our school cafeteria at Monterey High School served this and was it ever delicious. It hits the spot in the summer when it's hot.
My husband and family, all but one member, like this. It is so simple to make and is easy on the food budget. It will cost about 5 or 6 dollars to make. It will make 10 to 12 servings.
In the picture I wanted to show you the different ways to serve it. You can spread it out in a glass dish that can be frozen. I also put a serving in a small jelly jar to freeze. That makes it handy for kids or adults to take out and eat on a hot day. Just make it handy for folks to eat.

Lemon Mousse
1 12-ounce can evaporated milk
1 teaspoon lemon rind
Juice of 2 lemons
1 cup sugar
12 graham crackers, crushed
1 teaspoon lemon rind
Juice of 2 lemons
1 cup sugar
12 graham crackers, crushed
Chill evaporated milk in freezer until crystals form. Spoon into chilled bowl. Beat until fluffy. Add lemon peel and lemon juice gradually, beating well after each addition. Add sugar gradually, beating well after each addition. Spread half the graham cracker crumbs in 9-inch square glass dish. Pour in milk mixture. Cover with remaining cracker crumbs. Freeze, covered, until firm. Will keep several weeks and is ready to serve in a moment’s notice. Serves 9. This dessert was served at Monterey High School in the 1960's.
I like to make individual servings in small clear glasses. Layer crumbs, lemon mousse filling then sprinkle crumbs on top. Cover with plastic wrap and freeze or if it's a canning jar put the lid on it.
Sometimes the lemons might have a lot of juice and will make it tart. I've had that happen. So it would be good to taste after adding sugar and part of juice. If it needs more lemon, add more or if it is too tart, may add more sugar. Enjoy.
Are you going thru a sad time? Emotions like sadness aren't something to skip over--they're feelings to move through. Remember how Job sat in his grief for 7 days, David cried out, "How long, O, Lord?" And Jesus wept at Lazarus’ tomb, even knowing He was about to raise the dead man. God doesn't ask us to pretend everything is fine or to always feel hopeful. A life of faith involves being honest with ourselves, with others, and with the Lord and then leaning on Him for guidance.
"There's a time for everything, a time to weep and a time to laugh, a time to mourn and a time to dance." Ecclesiastes 3:1, 4.
And there is a time to go to bed because I must go to the hospital in the morning to get my heart shocked. It's out of rhythm. But I thought I had good rhythm, didn't I play the snare drum in the high school band?
